Cooking Grass-fed Beef


Because grass-fed beef is leaner than grain-fed, it doesn't have a lot of spare fat to keep it moist when cooked too long or at temperatures that are too high.



Tips for Cooking Grass-Fed Beef:



1. Bring your grass-fed meat to room temperature before cooking. Do not use a microwave to defrost your meat.


2. Don’t overcook! Grass-fed beef tends to be lean and cooking to well-done can dry it out. Cooking rare or medium rare preserves the natural juiciness of the meat.


3. Reduce the temperature 50 degrees when cooking roasts. We cook our roasts at 250 to 275 degrees. It takes a little longer, but it’s worth it.


4. Fat and juices make beef tender and flavorful. When grilling or roasting, sear the meat quickly over high heat to seal in the juices.


5. Grass-fed ground beef is very lean. You may find that you need to add a little olive oil when browning it or pan frying hamburgers.


6. Let your meat rest for a few minutes after cooking to allow the juices to re-distribute evenly hroughout the meat.
